This impressive little breakfast is a deliciously different use of the everyday egg.
If you don’t have a spiralizer (https://amzn.to/4fturZS) your can cut the Zucchinis into noodle shaped strips about 1/8 – 1/4 inch wide.
Ingredients
- 2 zucchinis, spiralized
- 2 large eggs
- 1 tablespoon (30 mL) of olive oil
- salt and pepper to taste
- optional toppings, such as cheese, sliced avocado, or red pepper flakes
Directions
- Preheat the oven to 350°F (180°C).
- Add the olive oil to a pan and sauté the zucchini over medium heat for 2–3 minutes, or until tender.
- Arrange each spiralized zucchini in a skillet to create a nest. Crack an egg in the center, sprinkle with salt and pepper, and bake for 5 minutes or until egg is the firmness you like.
- Add desired toppings and serve.
